Yay! I finally got my three swap matches last night for my cookie awesomeness…I was starting to fret that it was taking so long!
While I can’t give details about who my matches are, or what recipe I’m going to make (as that takes the fun out of the surprise), I will say that I have a bit of a challenge before me due to some dietary restrictions in one or more of my matches. To wit, the recipe I had originally researched and planned on making is now a bust, as one of the main, non-substitutable ingredients is a big no-no.
So, back to the drawing board for me, with more research and tweaking (not twerking) to see if I can make a cookie recipe that not only covers all the myriad dietary restrictions I’m labouring under, but also, you know, tastes *awesome* and is easy to replicate for those recipients who would want to make it again.

Alicia, I just wanted to say thank you so much for the delicious cookies!! I cannot believe they are vegan (the texture and taste is perfect!) I plan to share your photo on Instagram but I am having problems accessing your page (let me know and I will properly credit you!) Seriously, thank you again (and I, too, had to change my whole game plan because I had some vegan food bloggers 😉 )

You are so welcome, Kacey! I’m just thrilled that they turned out the way they did. I do freely admit (as I will mention in my own post) that I cribbed the basic recipe from Vegan Cookies Invade Your Cookie Jar, by Isa Chandra Moscowitz and Terry Romero, who are vegan pros, but I added my own touches and changes to make it my own. It *is* hard to believe there’s no butter or eggs in that recipe, isn’t it?
